Fried Eggplant

Ingredients:
1 cup flour
1/4 tsp. salt
1 egg, slightly beaten
1 cup milk
1 Tbs. melted fat
1 eggplant cut into 1/2 by 1 inch sticks or sliced

Preparation:
Lightly salt eggplant sticks and set aside. Combine flour and salt. Set aside. Mix egg, milk and fat. Gradually add flour to egg mixture beating constantly until smooth. Dip pieces of eggplant into batter then drop into 375˚ oil and fry until browned (about 2-5 minutes). Remove from oil and drain on paper towels.
