Lemon Ice Cream


Ingredients:
2 cups heavy cream
1 cup sugar
1 Tbs. grated lemon peel
1/2 cup fresh squeezed lemon juice

Preparation:
Blend together cream and sugar until sugar dissolves. Add lemon peel and juice and continue mixing. Place in ice cream freezer and freeze according to manufacturer’s directions.

Serving Suggestion:
Place ice cream in sundae dish, top with a raspberry sauce and garnish with mint leaves. For a unique presentation, cut 1/3 off the top of lemons; hollow out the inside, cut the end so the lemon sits flat on a plate. Fill lemon with ice cream, put top back on, garnish and serve.
