Marinated Cucumbers

Ingredients:
2 cucumbers
2 Tbs. salt
1 1/2 cups sour cream
1 to 2 Tbs. olive oil
1/2 oz. chopped chives
1/2 oz. chopped dill
1 to 2 tsp. white vinegar

Preparation:
Peel cucumbers and slice paper thin (preferably with a mandolin). Generously salt cucumbers and place in an aluminum bowl. Place in refrigerator for an hour or two to allow the salt to draw out the water.

To prepare sauce, combine sour cream, olive oil, chives and dill. Set in refrigerator to chill and allow flavors to blend. Adjust seasonings as necessary.

An hour prior to dinner, remove cucumbers from refrigerator. In batches, squeeze cucumbers in your hands to remove all the water. Place in bowl and add dressing. Keep refrigerated until ready to use.
