Melon Sorbet

Ingredients:
2 1/2 cups water
1 1/2 cups sugar
3 1/2 lbs. very ripe honeydew melon, cut into 1 inch pieces
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
2 Tbs. Grand Marnier

Preparation:
Heat water and sugar in small heavy saucepan over low heat, swirling pan occasionally, until sugar dissolves. Increase heat and boil 5 minutes. Cool. Refrigerate syrup until well chilled, stirring occasionally.

Purée melon until smooth. Mix 2 cups purée with syrup, lemon and lime juice and liqueur. Transfer to ice cream freezer and freeze.

Variation:
Substitute cantaloupe for honeydew or make both flavors for a contrast in colors and flavor.
