40 oz. can sweet potatoes
2 eggs
1/4 cup soft butter
1 tsp. vanilla
3/4 cup sugar
Topping:
1/3 cup melted butter1 cup brown sugar
3/4 cup chopped pecans
Preparation:
Drain sweet potatoes and place in mixing bowl. Blend until smooth. Add sugar, butter and vanilla. Mix until blended. Add beaten eggs and blend well. Pour into a greased casserole.
Combine topping ingredients and mix well. Sprinkle topping on sweet potato mixture. Place in 350˚ oven and heat for 30 minutes.
Serving Suggestion:
Great served with the traditional turkey dinner on Thanksgiving.
