Rosemary Potatoes

Ingredients:
18 baby new potatoes
1 sprig of fresh rosemary
3 Tbs. fresh chopped rosemary
1/2 cup clarified butter
Salt and pepper

Preparation:
Wash potatoes and place in pressure cooker. Place sprig of rosemary under potatoes in water. Pressure cook for 6 minutes and cool cooker quickly by running pan under cold water. Peel potatoes. Place butter and chopped rosemary in skillet. Add potatoes and sauté until golden brown. Salt and pepper to taste.

Serving Suggestion:
These potatoes are great served with roast pork loin.
