Sherry’d Pears

Ingredients:
3 large pears, halved and cored (leave peel on)
2 Tbs. butter
1/2 tsp. almond extract
1/4 cup finely chopped almonds
1/2 cup cream sherry

Preparation:
Place pears in buttered baking dish cavity side up. Cream together butter, almond extract and almonds. Place dollop inside cavity of each pear and pour sherry over pears. Bake at 350˚ for 30 minutes.

Serving Suggestion:
Serve warm with whipped cream.

Variation:
Substitute Calvados for sherry and add 1/2 cup brown sugar to butter mixture.

This is a ling cod. It’s an ugly fish but tastes great.
