Shredded Zucchini with Garlic

Ingredients:
2 lbs. (6 to 8) medium-size zucchini
8 Tbs. butter
2 cloves garlic, minced
1 tsp. salt

Preparation:
Trim off zucchini ends, but do not peel. Shred zucchini using grater or food processor. Wrap grated zucchini in clean dish towel (or use your hands) and squeeze out as much moisture as possible.

Heat butter in skillet over medium-high heat until it bubbles. Add zucchini, garlic, and salt. Sauté about 2 minutes, turning with spatula, until zucchini is heated through, barely tender, and still crisp. Remove zucchini to serving dish and keep warm.

Serving Suggestion:
Shredded zucchini is great with chicken.
