8 dried shiitake (black Japanese) mushrooms
3 Tbs. sugar
3 Tbs. shoyu (Japanese soy sauce)
1 Tbs. mirin (sweet rice wine)
Preparation:
Soak dried shiitakes in warm water for 30 minutes. Remove stems and discard. Cut mushrooms in strips. Place soaking liquid (discarding sediment) in saucepan. Add sugar, shoyu, and mirin. Cook until juices have all been obsorbed.
