1 cup brown sugar
1/3 cup Kosher salt
1/2 tsp. garlic salt
1/2 tsp. onion powder
Pinch of black pepper
1 Tbs. liquid smoke
1/3 cup water
Preparation:
Mix all ingredients together. Place bellies in Foodsaver
bag or marinade container and seal. Marinate bellies overnight or at least 12 hours. Rinse bellies and smoke according to your smoker's instructions.
Variation:
Alternately, just marinate 4 hours. Drain bellies and pat dry. Broil until done (a few minutes).
This recipe works well for tuna bellies too.
