Baked Chicken Breasts

Ingredients:
4 boneless chicken breasts with skin on
1/2 cup butter
Salt and pepper

Preparation:
Place 2 tablespoons butter under skin of each chicken breast. Place breasts in Pyrex baking dish sprayed with Pam or other non-stick spray. Sprinkle top of chicken with salt and pepper and place remaining butter on top of chicken breasts. Cover dish and bake in 350˚ oven for 1/2 hour. Remove lid and bake for another half hour. Baste chicken with juices in baking dish twice during baking.

Serving Suggestion:
Mashed potatoes made with Yukon gold potatoes and lots of butter are wonderful with baked chicken breasts.

History:
This is one of Mike’s favorite Sunday dinners.
