Ingredients:
4 boneless, skinless chicken breasts, slightly pounded
4 large cloves garlic, minced
1 medium onion, thinly sliced and separated into rings
3 lemons, juice and zest
1/2 cup olive oil
2 sprigs fresh thyme
2 Tbs. fresh basil, chopped
1 tsp. salt
1/2 tsp. freshly ground black pepper
Preparation:
Combine garlic, onion, lemon juice (1/2 cup), zest, olive oil, thyme, basil, salt and pepper in shallow glass baking dish. Stir well to make marinade. Add chicken breasts and turn to coat well with marinade. Marinate at least 30 minutes.
When BBQ is ready, place chicken breasts on grill and cook approximately 10-15 minutes (depending on thickness of chicken), turning half way through.
Transfer marinade to small saucepan, set pan on side of grill and bring marinade to a simmer. Brush chicken with marinade while cooking.
Serving Suggestion:
Transfer chicken breasts to plate. Top chicken with lemon slices and basil. Serve with remaining marinade on the side.
