Meats – Cooking Times

Prime Rib:
17 minutes per pound at 350˚ until internal temperature reaches 125˚ for medium rare. Temperature will go up 10˚ after removing from heat.

Whole Filet or Châteaubriand:
45 minutes total time at 350˚ for medium rare. Remove from oven when internal temperature reaches 120˚.

Beef Roast:
2 1/2 to 3 hours in a 350˚ oven.

Ham:
2 hours at 325˚ for cooked ham and 30 minutes per pound for uncooked ham.

Pork Roast:
6 to 8 hours at 325˚ to 350˚ for a large shoulder roast or 1 1/2 to 2 hours (or until the internal temperature reaches 165˚) for a loin roast.
