Macadamia Nut & Cocoanut Crusted Fish

Ingredients:
1 cup crushed macadamia nuts
1 cup cocoanut
2 cups Panko flakes (Japanese Bread Crumbs)
2 eggs
1 1/2 to 2 lbs. fish fillets (tuna, yellowtail, white seabass, rockcod,
     etc.)
1 cup flour
Salt and pepper

Preparation:
Combine macadamia nuts, cocoanut and Panko flakes in large bowl.  Place eggs in separate bowl and beat slightly.  Place flour in another bowl.

Prepare fish fillets by lightly sprinkling with salt and pepper.  Dip fillets in flour, egg mixture then Panko flake mixture.

Heat canola, peanut or vegetable oil in deep fryer or high-sided skillet to 450 degrees.  Fry small batches of fish in hot oil until lightly golden in color.  Serve immediately.
