Fried Halibut

Ingredients:
1 lb. halibut filets
1 cup flour
2 eggs
2 cups Panko Flakes or Bread Crumbs
Sea Salt and White Pepper
Vegetable oil for frying

Preparation: Cut halibut into 2 inch by 4 inch pieces, pat dry with paper towels then lightly salt and pepper both sides of fish.

Place enough oil in a heavy pan until it is two inches deep. Heat to 400 degrees.

Break eggs into a bowl and add a teaspoon of water. Whisk eggs until mixed. Place Panko Flakes in one bowl and flour in another bowl. Dip halibut pieces first in flour, then the egg and last the Panko Flakes. Fry three or four pieces of halibut at a time until light brown then turn over until the other side is brown approximately 1 minute per side.

Serving Suggestion:
Try serving halibut with tarter sauce and baked stuffed potatoes. Variation: This recipe works well with a variety of fish including wahoo, yellowtail and even tuna.
