3 lbs. yams
1 cup sugar
1 cup brown sugar
8 oz. butter
Preparation:
Peel potatoes and cut into 2-inch cubes. Place potatoes in large pot, cover with sugar, brown sugar and butter. Cook over medium heat until potatoes are fork tender (about 20 minutes) but not mushy. Drain yams, return syrup to pan and cook down until slightly thick.
