Carnitas

Ingredients:
2 lbs. pork butt
1/2 medium onion, cut in half
1 large garlic clove
1 tsp. salt
1/4 tsp. dried oregano, crushed
1/4 tsp. ground cumin
Salt or garlic salt, to taste
Cilantro, chopped
Salsa

Preparation:
In a 3 quart saucepan, combine pork, onion, garlic, 1 teaspoon salt, oregano and cumin; add enough water to cover. Bring to a boil, reduce heat, cover and simmer for 2 hours.

Preheat oven to 350˚. Drain meat and place in a baking pan. Sprinkle meat evenly with salt or garlic salt. Bake at 350˚ for 45 minutes. Remove from oven.

While meat is warm, use 2 forks to shred.

Serving Suggestion:
Serve with a little fresh squeezed lime juice, fresh tortillas, salsa and chopped cilantro.
