3 to 4 lb. leg of lamb
4 Tbs. clarified butter
10-15 cloves garlic
1 large carrot, peeled and sliced
1 large onion, peeled and sliced
1 tsp. salt
1/4 tsp. pepper
Preparation:
Prepare leg by trimming all fat and placing halves of garlic cloves into the meat randomly about an inch deep. Brush the lamb with butter and place on a rack in a roasting pan. Set in the upper third of the oven preheated to 350˚. Bake for 1 to 1 1/4 hour or until internal temperature reaches 145˚.
