Chicken Pâté

Ingredients:
2 chicken breasts
2 slices Prosciutto
1/3 small onion, minced
2 cloves garlic, minced
1 Tbs. chopped fresh parsley
1 tsp. minced thyme (or 1/2 tsp. dry)
1/3 tsp. salt
2 tsp. brandy or Cognac
1/4 cup butter

Preparation:
Put chicken breasts and Prosciutto through a meat grinder or chop in a food processor. Mix all ingredients together. Press mixture into a pâté terrine. Bake at 350˚ for 45 minutes to 1 hour.

Variation:
Mixture can be used to fill flattened chicken breasts or to stuff sausage casings. It can also be wrapped in cheesecloth and boiled or baked until done. Try It covered with a spaghetti sauce and baked.

History:
Pâté is a French creation; one they make quite well.
