Fried Chicken

Ingredients:
1 frying chicken, cut into pieces
3/4 cup flour
Salt and pepper
Vegetable oil

Preparation:
Place flour, salt and pepper into plastic bag. Put chicken pieces into bag and shake to coat chicken well.

Heat oil in a deep skillet to 375˚ and add the chicken. Cover skillet and brown the first side for about 5 minutes. Remove lid and turn chicken pieces over to brown other side. Leave the lid off to finish cooking.

Drain chicken pieces on paper towels.

Serving Suggestion:
Serve chicken hot with mashed potatoes and milk gravy. To make a milk gravy, pour all but 2 tablespoons of oil out of skillet. Add 2 – 3 tablespoons flour and brown for a few minutes. Add 1 cup milk to skillet stirring constantly until thickened. If gravy is too thick, add more milk. Adjust seasoning with salt and pepper.

If preferred, chill chicken and serve cold with potato salad. Great for outdoor picnics.
