Filet Mignon

Ingredients:
4 8-oz. filet mignon steaks (3/4 inch thick)
Salt and pepper
1/2 cup clarified butter

Preparation:
Heat skillet over medium high heat. Place butter in skillet and sauté steaks for 1 to 2 minutes on each side. Serve immediately.

Serving Suggestion:
Filets are great with sautéed green beans.
