Swiss Steak

Ingredients:
4 sirloin steaks, tenderized
1/2 cup plus 4 Tbs. flour
Salt and pepper
Vegetable oil
2 cups milk

Preparation:
Salt and pepper both sides of steaks. Put flour in bowl. Dip each side of steaks in flour.

Place enough oil in electric skillet to 1/2 inch deep. Heat oil until it reaches 350˚. Fry steaks until browned on both sides (approximately 3 minutes per side). Remove steaks from pan and place on a warm platter.

Drain oil from pan leaving 4 tablespoons. Add 4 tablespoons flour and cook until slightly browned. Add 2 cups milk whisking constantly until gravy thickens. Season to taste with salt and pepper.

Serving Suggestion:
Swiss steak requires a big helping of mashed potatoes to help soak up the milk gravy. Yum!

Variation:
Be sure to make plenty of swiss steak so you’ll have leftovers for stroganoff.
