Enchiladas

Ingredients:
1 dozen corn tortillas
1 lb. ground beef, chicken or turkey
1 pkg. taco seasoning
1 14-oz. can enchilada sauce
1/2 lb. grated cheddar cheese
1/2 lb. grated jack cheese
1 medium onion chopped

Preparation:
Sauté meat along with taco seasoning. Set aside. Combine grated cheeses and set aside. Heat enchilada sauce. Dip tortilla in sauce and place on plate. Fill tortilla with meat, cheese and onion. Roll tortilla and place in a 9” x 11” Pyrex dish. Repeat with the rest of the tortillas. Cover with remaining enchilada sauce and sprinkle with remaining cheeses.

Place enchiladas in 350˚ oven until heated through and cheese is melted (approximately 15 minutes).
