Ingredients:
1/4 cup rice vinegar
1 lime, juice only
1 garlic clove, chopped
3 Tbs. olive oil
1 ripe avocado, halved, peeled and seeded
2 Tbs. mayonnaise
Salt and pepper
Preparation:
Combine rice vinegar, lime juice and garlic in a food processor or blender and process for 30 seconds. While motor is running, add olive oil in a thin stream. Add avocado and mayonnaise and process until smooth. Season with salt and pepper to taste.
